Peri Peri African Chicken

Ingredients

  • ¼cuppaprika

  • 2 tbspshot chili powder

  • 3clovesgarlic, minced

  • 1cupfresh lemon juice

  • 4bone-in chicken breast (or thigh) halves

  • 1½tspsfresh ginger, chopped

  • 1½tsps salt

Wine Pairing

  • red blend

Instructions

  • STIR together the paprika, chili powder, lemon juice, garlic, ginger and salt in a large bowl.

  • RUB chicken with the mixture, place in a dish and marinate for 3 hours.

  • PREHEAT a grill to medium heat.

  • PLACE chicken onto the grill and discard the marinade. Cook for about 30 minutes, turning occassionally, until the skin is slightly charred and juices run clear.

  • SERVE with a side of your choosing (also awesome for sandwiches!).
