Peri Peri African Chicken
Ingredients
¼cuppaprika
2 tbspshot chili powder
3clovesgarlic, minced
1cupfresh lemon juice
4bone-in chicken breast (or thigh) halves
1½tspsfresh ginger, chopped
1½tsps salt
Wine Pairing
red blend
Instructions
STIR together the paprika, chili powder, lemon juice, garlic, ginger and salt in a large bowl.
RUB chicken with the mixture, place in a dish and marinate for 3 hours.
PREHEAT a grill to medium heat.
PLACE chicken onto the grill and discard the marinade. Cook for about 30 minutes, turning occassionally, until the skin is slightly charred and juices run clear.
SERVE with a side of your choosing (also awesome for sandwiches!).
